How we know if the month of Aviv is the beginning of New Year?
12:1 ויאמר יהוה אל־משׁה ואל־אהרן בארץ מצרים לאמר׃
And ADONAI (יהוה) speak to Moshe and Aharon in the land Mitzrayim, saying:
12:2 החדשׁ הזה לכם ראשׁ חדשׁים ראשׁון הוא לכם לחדשׁי השׁנה׃
"This month shall be to you the beginning of months:
it shall be the first month of the year to you.
12:3 דברו אל־כל־עדת ישׂראל לאמר בעשׂר לחדשׁ הזה ויקחו להם אישׁ שׂה לבית־אבת שׂה לבית׃
Speak you to all the congregation of Yisrael, saying:
"In the tenth day of this month they shall take to them every man a lamb, according to the house of [their] fathers, a lamb for a household;
12:4 ואם־ימעט הבית מהיות משׂה ולקח הוא ושׁכנו הקרב אל־ביתו במכסת נפשׁת אישׁ לפי אכלו תכסו על־השׂה׃
and if the household be too little for the lamb, let him and his neighbour next to his house take [it] according to the number of the souls; every man according to his eating shall make your count for the lamb.
12:5 שׂה תמים זכר בן־שׁנה יהיה לכם מן־הכבשׂים ומן־העזים תקחו׃
Your lamb shall be tamim (without blemish), a male of the first year: you shall take it out from the sheep, or from the goats:
12:6 והיה לכם למשׁמרת עד ארבעה עשׂר יום לחדשׁ הזה ושׁחטו אתו כל קהל עדת־ישׂראל בין הערבים׃
And you shall keep it up until the fourteenth day of the same month: and the whole assembly of the congregation of Yisrael shall kill it in the evening.
12:7 ולקחו מן־הדם ונתנו על־שׁתי המזוזת ועל־המשׁקוף על הבתים אשׁר־יאכלו אתו בהם׃
And they shall take of the blood, and strike [it] on the two side posts and on the upper door post of the houses, wherein they shall eat it.
12:8 ואכלו את־הבשׂר בלילה הזה צלי־אשׁ ומצות על־מררים יאכלהו׃
And they shall eat the flesh in that night, roast with fire, and Matzah; and with bitter herbs they shall eat it.
12:9 אל־תאכלו ממנו נא ובשׁל מבשׁל במים כי אם־צלי־אשׁ ראשׁו על־כרעיו ועל־קרבו׃
Do not eat it raw, nor boiled at all with water, but roast with fire; his head with his legs, and with the inwards thereof.
12:10 ולא־תותירו ממנו עד־בקר והנתר ממנו עד־בקר באשׁ תשׂרפו׃
And you shall let nothing of it remain until the morning; and that which remains of it until the morning you shall burn with fire.
12:11 וככה תאכלו אתו מתניכם חגרים נעליכם ברגליכם ומקלכם בידכם ואכלתם אתו בחפזון פסח הוא ליהוה׃
And thus shall you eat it; with your loins girded, your shoes on your feet, and your staff in your hand; and you shall eat it in haste: it is ADONAI (יהוה)'S Pesach.
12:12 ועברתי בארץ־מצרים בלילה הזה והכיתי כל־בכור בארץ מצרים מאדם ועד־בהמה ובכל־אלהי מצרים אעשׂה שׁפטים אני יהוה׃
For I will pass through the land Mitzrayim this night, and will smite all the firstborn in the land Mitzrayim, both man and beast; and against all the gods of Mitzrayim I will execute judgment: Ani ADONAI (יהוה).
12:13 והיה הדם לכם לאת על הבתים אשׁר אתם שׁם וראיתי את־הדם ופסחתי עלכם ולא־יהיה בכם נגף למשׁחית בהכתי בארץ מצרים׃
And the blood shall be to you for upon the houses where you are: and when I see the blood, I will pass over you, and the plague shall not be upon you to destroy [you], when I smite the land Mitzrayim.
12:14 והיה היום הזה לכם לזכרון וחגתם אתו חג ליהוה לדרתיכם חקת עולם תחגהו׃
And this day shall be to you for a memorial; and you shall keep it a feast to ADONAI (יהוה) throughout your generations; you shall keep it a feast by an ordinance forever.
Shivat yamim matzot tokhelu akh bayom harishon tashbitu seor mibateikhem ki kol-okhel chametz venikhreta hanefesh hahiv miYisrael miyom harishon ad-yom hashevii:
Seven days shall you eat unleaved bread. Indeed on the first day you cause leaven (fermentation) to cease from your houses. For whosoever eats that which is leavened (fermented) from the first day until the seventh day, that soul shall be cut off from Yisrael.
12:16 וביום הראשׁון מקרא־קדשׁ וביום השׁביעי מקרא־קדשׁ יהיה לכם כל־מלאכה לא־יעשׂה בהם אך אשׁר יאכל לכל־נפשׁ הוא לבדו יעשׂה לכם׃
On the first day you shall hold a set apart assembly, and on the seventh day a set apart assembly. No work shall be done on those days. But what everyone needs to eat, that alone may be prepared by you.
12:17 ושׁמרתם את־המצות כי בעצם היום הזה הוצאתי את־צבאותיכם מארץ מצרים ושׁמרתם את־היום הזה לדרתיכם חקת עולם׃
And you shall observe the feast of Unleavened Bread; for in this selfsame day have I brought your armies out of the land Mitzrayim: therefore shall you observe this day in your generations by an ordinance forever.

12:18 בראשׁן בארבעה עשׂר יום לחדשׁ בערב תאכלו מצת עד יום האחד ועשׂרים לחדשׁ בערב׃
In the first month, on the fourteenth day of the month at even, you shall eat Unleavened Bread, until the one and twentieth day of the month at even.
Shivat yamim seor lo yimatze bevateikhem ki kol-okhel makhmetzet venikhretah hanefesh hahiv meadat Yisrael bager uveezrakh haeretz:
‘For seven days no leaven is to be found in your houses, for if anyone eats what is leavened, that same being shall be cut off from the congregation of Yisra’el, whether sojourner or native of the land.
12:20 כל־מחמצת לא תאכלו בכל מושׁבתיכם תאכלו מצות׃
You shall eat nothing leavened; in all your dwelling places you shall eat unleavened bread."

12:21(v) ויקרא משׁה לכל־זקני ישׂראל ויאמר אלהם משׁכו וקחו לכם צאן למשׁפחתיכם ושׁחטו הפסח׃
Then Moshe called for all the Ziknei of Yisrael, and said to them, Draw out and take you a lamb according to your families, and kill the Pesach.

12:22 ולקחתם אגדת אזוב וטבלתם בדם אשׁר־בסף והגעתם אל־המשׁקוף ואל־שׁתי המזוזת מן־הדם אשׁר בסף ואתם לא תצאו אישׁ מפתח־ביתו עד־בקר׃
And you shall take a bunch of hyssop, and dip [it] in the blood that [is] in the bason, and strike the lintel and the two side posts with the blood that [is] in the bason; and none of you shall go out at the door of his house until the morning.
12:23 וְעָבַר יְהֹוָה לִנְגֹּף אֶת-מִצְרַיִם וְרָאָה אֶת-הַדָּם עַל-הַמַּשְקוֹף וְעַל שְתֵּי הַמְּזוּזֹת וּפָסַח יְהֹוָה עַל-הַפֶּתַח וְלֹא יִתֵּן הַמַּשְחִית לָבֹא אֶל-בָּתֵּיכֶם לִנְגֹּף׃
Ve'avar Adonai lingof et-Mitzrayim vera'ah et-hadam al-hamashkof ve'al shetei hamezuzot ufasach Adonai al-hapetach velo yiten hamashchit lavo el-bateichem lingof.
For Adonai will pass through to smite the Mitzrites; and when he sees the blood upon the lintel, and on the two side posts, Adonai will pass over the door, and will not suffer the destroyer to come in to your houses to smite you.
12:24 ושׁמרתם את־הדבר הזה לחק־לך ולבניך עד־עולם׃
Ushemartem et-hadavar hazeh lechak-lecha ulevaneikha ad-olam:
And you shall observe this thing for an ordinance to you and to your sons for ever.
12:25 והיה כי־תבאו אל־הארץ אשׁר יתן יהוה לכם כאשׁר דבר ושׁמרתם את־העבדה הזאת׃
And it shall come to pass, when you be come to the land which ADONAI (יהוה) will give you, according as He has promised, that you shall keep this service.
Vehayah ki-yomru aleikhem beneikhem mah haavodah hazot lakhem:
And it shall come to pass, when your children shall say to you,
"What mean you by this service?"

Vaamartem zevakh-Pesach
hu laADONAI asher pasach al-batei venei-Yisrael beMitzrayim
benagpo et-Mitzrayim veet-bateinu hitzil vayikod haam vayishtakhavu:
That you shall say, "It is the sacrifice of ADONAI'S Pesach, who passed over beit benai Yisrael in Mitzrayim, when he smote the Mitzrites, and delivered our houses. And the people bowed the head and worshipped.
12:28 וילכו ויעשׂו בני ישׂראל כאשׁר צוה יהוה את־משׁה ואהרן כן עשׂו׃
And Benai Yisrael went away, and did as ADONAI (יהוה) had commanded Moshe and Aharon, so did they.

12:29 (vi) ויהי בחצי הלילה ויהוה הכה כל־בכור בארץ מצרים מבכר פרעה הישׁב על־כסאו עד בכור השׁבי אשׁר בבית הבור וכל בכור בהמה׃
And it came to pass, that at midnight ADONAI (יהוה) smote all the firstborn in the land Mitzrayim, from the firstborn of Paroh that sat on his throne to the firstborn of the captive that was in the dungeon; and all the firstborn of cattle.
12:30 ויקם פרעה לילה הוא וכל־עבדיו וכל־מצרים ותהי צעקה גדלה במצרים כי־אין בית אשׁר אין־שׁם מת׃
And Paroh rose up in the night, he, and all his servants, and all the Mitzrites; and there was a great cry in Mitzrayim; for there was not a house where there was not one dead.
12:31 ויקרא למשׁה ולאהרן לילה ויאמר קומו צאו מתוך עמי גם־אתם גם־בני ישׂראל ולכו עבדו את־יהוה כדברכם׃
And he called for Moshe and Aharon by night, and said, Rise up, and get you forth from among My people, both you and Benai Yisrael; and go, serve ADONAI (יהוה), as you have said.
12:32 גם־צאנכם גם־בקרכם קחו כאשׁר דברתם ולכו וברכתם גם־אתי׃
Also take your flocks and your herds, as you have said, and be gone; and bless me also.
12:33 ותחזק מצרים על־העם למהר לשׁלחם מן־הארץ כי אמרו כלנו מתים׃
Vatekhezak Mitzrayim al-haam lemaher leshalkham min-haaretz ki amru kulanu metim:
And the Mitzrites were urgent upon the people, that they might send them out of the land in haste; for they said, We be all dead men.
12:34 וישׂא העם את־בצקו טרם יחמץ משׁארתם צררת בשׂמלתם על־שׁכמם׃
So the people took their dough before it was leavened, their kneading bowls being bound up in their cloaks on their shoulders.
12:35 ובני־ישׂראל עשׂו כדבר משׁה וישׁאלו ממצרים כלי־כסף וכלי זהב ושׂמלת׃
And Benai Yisrael did according to the word of Moshe; and they borrowed of the Mitzrites jewels of silver, and jewels of gold, and raiment:
12:36 ויהוה נתן את־חן העם בעיני מצרים וישׁאלום וינצלו את־מצרים׃
And ADONAI (יהוה) gave the people favour in the sight of the Mitzrites, so that they lent to them such things as they required. And they spoiled the Mitzrites.
12:37 ויסעו בני־ישׂראל מרעמסס סכתה כשׁשׁ־מאות אלף רגלי הגברים לבד מטף׃
And benai Yisrael journeyed from Rameses to Sukkot, about six hundred thousand on foot [that were] men, beside children.
12:38 וגם־ערב רב עלה אתם וצאן ובקר מקנה כבד מאד׃
And a mixed multitude went up also with them; and flocks, and herds, even very much cattle.
12:39 ויאפו את־הבצק אשׁר הוציאו ממצרים עגת מצות כי לא חמץ כי־גרשׁו ממצרים ולא יכלו להתמהמה וגם־צדה לא־עשׂו להם׃
And they baked matzot of the batzek (dough) that they had brought out of Mitzarim, ki lo chametz (leavened), because they were driven out of Mitzrayim in such a hurry neither did they prepare any tzeidah (food supply) for themselves.
12:40 ומושׁב בני ישׂראל אשׁר ישׁבו במצרים שׁלשׁים שׁנה וארבע מאות שׁנה׃
Now the sojourning of benai Yisrael, who dwelt in Mitzrayim, was four hundred and thirty years.
12:41 ויהי מקץ שׁלשׁים שׁנה וארבע מאות שׁנה ויהי בעצם היום הזה יצאו כל־צבאות יהוה מארץ מצרים׃
And it came to pass at the end of the four hundred and thirty years, even the selfsame day it came to pass, that all the hosts of ADONAI (יהוה) went out from the land Mitzrayim.
12:42 ליל שׁמרים הוא ליהוה להוציאם מארץ מצרים הוא־הלילה הזה ליהוה שׁמרים לכל־בני ישׂראל לדרתם׃
It is a night to be much observed to ADONAI (יהוה) for bringing them out from the land Mitzrayim: this is that night of ADONAI (יהוה) to be observed of all Benai Yisrael in their generations.
12:43 ויאמר יהוה אל־משׁה ואהרן זאת חקת הפסח כל־בן־נכר לא־יאכל בו׃
And ADONAI (יהוה) said to Moshe and Aharon:
This is the ordinance of the Pesach: There shall no stranger eat thereof:
12:44 וכל־עבד אישׁ מקנת־כסף ומלתה אתו אז יאכל בו׃
But every man's servant that is bought for money, when you have circumcised him, then shall he eat thereof.
12:45 תושׁב ושׂכיר לא־יאכל־בו׃
A foreigner and an hired servant shall not eat thereof.
12:46 בבית אחד יאכל לא־תוציא מן־הבית מן־הבשׂר חוצה ועצם לא תשׁברו־בו׃
In one house shall it be eaten; you shall not carry forth ought of the flesh abroad out of the house; neither shall you break a bone thereof.
12:47 כל־עדת ישׂראל יעשׂו אתו׃
All the congregation of Yisrael shall keep it.
12:48 וכי־יגור אתך גר ועשׂה פסח ליהוה המול לו כל־זכר ואז יקרב לעשׂתו והיה כאזרח הארץ וכל־ערל לא־יאכל בו׃
And when a stranger shall sojourn with you, and will keep the Pesach to ADONAI (יהוה), let all his males be circumcised, and then let him come near and keep it; and he shall be as one that is born in the land: for no uncircumcised person shall eat thereof.
12:49 תורה אחת יהיה לאזרח ולגר הגר בתוככם׃
One you shall be to him that is homeborn, and to the stranger that sojourns among you.
12:50 ויעשׂו כל־בני ישׂראל כאשׁר צוה יהוה את־משׁה ואת־אהרן כן עשׂו׃
Thus did all benai Yisrael; as ADONAI (יהוה) commanded Moshe and Aharon, so did they.
12:51 ויהי בעצם היום הזה הוציא יהוה את־בני ישׂראל מארץ מצרים על־צבאתם׃
And it came to pass the selfsame day, that ADONAI (יהוה) did bring benai Yisrael out of the land Mitzrayim by their armies.
Shemot (Exodus) 12:2
הַחֹדֶשׁ הַזֶּה לָכֶם רֹאשׁ חֳדָשִׁים רִאשׁוֹן הוּא לָכֶם לְחָדְשֵׁי הַשָּׁנָה:
Hachodesh hazeh (this month) shall be unto you the beginning of months; it shall be the first month of the year to you.
when the sun goes down, we enter the new month of NISAN ניסן.
As there 4 New Years in Jewish calendar, 1 NISAN is known as Religious New Year. "Rosh Chodesh NISAN ראש חודש ניסן," which means "Month of NISAN" is also known as "Rosh HaChodashim ראש החודשים," which means "Head of the Months."
There are many other names for the month of NISAN:
1.) Chodesh HaAviv חודש האביב, means "the month of Spring."
2.) Chodesh HaRishon חודש הראשון, means "the first month."
3.) Chodesh HaGeulah חודש הגאולה, means "the month of redemption."
4.) Chodesh HaYehudah חודש היהודה

"Shabbat HaChodesh" is "the Shabbat of the month", a Shabbat that precedes the first of the Hebrew month of Nisan during which Pesach (Passover) is celebrated. On the first day of NISAN, G-D presented the first commandment of how to "sanctify the new moon" (kiddush hachodesh) for the onset of Rosh Chodesh and thus NISAN becomes the first month of the Jewish year (counting by months.).

What is unleaven? The word which describes any baked good that has no chametzer, such as yeast, baking powder, or baking soda. Barley is also a staple food, but its worth is often unrecognized or undervalued. The omer offered between Pesach and Shavuot was a measure of barley,
Matzah hccm . It is anything which is fermented or Chametz (uneven illgotten wealth). The normal process of making bread included some form of yeast to make the bread rise i.e the natural fementation of benign bacteria. During the Pesach no one was allowed to eat chametz bread (Ex 12: 15, 13:3,7) Matzah signified the suddenness of the deliverance of theYisrael by Elohim (Deut 16:3) . Ordinary Chametz bread was prohibited on other occassions but allowable under certain circumstances (Lev 7:13; 23:17, Amos 4:5). It later became a symbol of corruption and impurity in the Jewish religious system (Matt 16:12, Markos 8:15 1 Cor 5:8
The Hebrew word hametz is translated as Chametz bread and refers to food prepared from five species of grain--wheat, barley, oats, spelt, and rye--that has been allowed to chametz. (Hebrew: yetzer ha-ra) According to rabbinic psychology, each person is driven by both a GOOD INCLINATION (yetzer ha-tov) and an evil inclination (yetzer ha-ra).
ANI ADONAI (יהוה), I AM ADONAI (יהוה) Chametz is any food product derived of wheat (Hittah), barley (se'orah), rye, oats, spelt or its derivative.
